Rhubarb Cake

    Preheat oven to 180 degrees Celsius

    Boil the water

    Butter and line 20cm x 20cm tin

    Sift flour and spices

    Beat butter, sugar and fold in golden syrup

    Dissolve bicarb in 200ml of boiling water and add to the sugar mixture

    Add flour, then eggs, mix thoroughly and add rhubarb, stir gently

    Pour mixture into the tin and bake for 50 to 60 mins, until springy

    Cool in the tin for 5 mins, then turn out and cool on a wire rack. Dust with icing sugar.
